About a year ago, I decided to start stretching my scorpion. I only stretched on one leg (bad idea, I know). It caused uneven muscle development in my back. While I have stretched both sides of my back for a few months now, the uneven muscle development has just gotten worse. My tumble has become really crooked because of it. I will move a whole mat in three standing back handsprings.

I have never really known how to fix my back, and since I was never in pain, I never really had urgent need to. But now, my back has started hurting non-stop. It's not bad - I'd say like a 2/10 - but it's definitely not a good sign. I know I really need to get something done about it, but I've never had a back injury before and so I have no idea who to see. Should I be going to a physiotherapist, a chiropractor or an osteopath? Or even just an ordinary doctor?

If anyone has been through something similar and could point me in the right direction, that would be really helpful.

I would say do a combination of chiropractic and PT. I have dealt with almost the exact same thing as you and doing both chiro and PT worked wonders. The PT can work on the specific muscles you need to strengthen and chiro can make sure that you are not out of alignment and causing problems in your hips or posture.
