I coach a junior 1 team and me and the other coach were talking about doing flatbacks extended since you can do teddybears extended. We couldn't find anything in the rule book. All it said was the flyer may not go above the head.

Flatbacks are considered Prep Level stunts making some legal in L1.

Depends on if it's a single leg stunt.
just remember that if you don't have a foot at all, its not a single or double leg stunt.

from the stunt definition
A stunt is determined to be "Single" or "Double" leg by the number of feet that the top

person has being supported by a base(s).

The most common problem I see with my squads is the stunt starting to go inverted. usually only happens if i have a short backspot on the stunt though.
