I believe you can have up to 5 days total through varsity. It does need to be added at registration or leading up to your final payment through Varsity they will let you edit your plan. Disney will let you buy passes for additional days at the gate but it's separate from Varsity and through Disney only. You can also go online and buy those tickets in advance.
